The parchment (the pale brown skin that surrounds the coffee bean) is covered with plastic sheeting, both to protect it and to prevent it from drying too rapidly.\u003cbr data-mce-fragment=\"1\"\u003eAt this high altitude, and this close to the equator, sun that is too intense can damage the cherries and parchment and cloud the flavor.\u003cbr data-mce-fragment=\"1\"\u003eIn addition, while the usual drying period is 8 days, here the beans are dried slowly over 12 to 15 days.
