How I Shape Coffee at Botarhythm
Coffee preferences really do vary widely. Fruitiness, body, aroma, everyone has their own axis.
And yet the things people tend to dislike are oddly similar. A heavy, burnt-tasting bitterness, a harshness that lingers on the tongue, these are impressions almost everyone wants to avoid.
At Botarhythm, I aim for a roast that holds back this "common dislike" while letting the bean's own character rise up naturally.

Where a Bean's Character Comes From
A coffee bean's character is shaped by the environment it grew in and the way it was finished.
At high altitude, for instance, the swing between warm days and cool nights tightens the bean and brings out a vivid fruitiness.
Sun drying leaves behind a sweet, fruit-derived aftertaste, while washed processing gives a clean, clear outline.
Honey and natural processing (drying the bean with the fruit flesh still on) add depth to the aroma.
With this background in mind, I fine-tune the heat and airflow during roasting, working to find the right balance of fruitiness, sweetness, texture, and aftertaste.
My Role as the Roaster
In dark roasts, I look for smoothness and body rather than heaviness. In light roasts, I look for fruitiness rather than sharpness. In the medium range, I look for where sweetness and aroma meet.
As the roaster, I see my role as protecting what the origin and processing have given the bean, working around what people tend to dislike, and gently nudging that bean's character one step forward.
