A few hours' drive south from Ethiopia's capital, Addis Ababa, lies the Gedeb district of the Yirgacheffe region. The area around "Worka Sakaro," set at the very high altitude of 1,900m to 2,100m, is blessed with soft, fertile soil rich in organic matter. On this land, whose name comes from Worka, meaning "gold" in the local language, and from the "great tree of Sakaro" that people affectionately speak of, small-scale farmers grow coffee in harmony with nature.
This lot takes the very highest-quality cherries, which would ordinarily be sent to washed processing, and finishes them instead by the traditional non-washed (natural) method. The harvested cherries are spread out on African beds (raised drying racks) and slowly dried (slow drying) over a long span of 20 days.
The staff at the BNT processing station wear green uniforms and take pride in their work. Fair wages, a high awareness of quality, and a thorough process of removing defective beans on the beds, all of it erases the off-flavors that natural coffees have so often been prone to, giving rise to a remarkably clean flavor.
