A gem of a coffee from Carmona Farm, one of Antigua's distinguished names. Raised in volcanic-ash soil and an ideal climate, these beans offer solid flavor and richness, a sweetness reminiscent of chocolate and brown sugar in harmony with a bright citrus fruitiness. Enjoy the smooth mouthfeel and mellow, lingering finish.


[About the origin]
Carmona Farm is a historic estate in the Antigua region of Guatemala. Its origins are said to date to 1541, when Juan de Carmona, an immigrant from Spain, began cultivating a variety of crops. In the late 1800s the Zelaya family acquired the farm and started growing coffee. From 1959, the third-generation María Zelaya took over the estate and remained involved in its management until the age of 81. Today her nephews Ricardo Zelaya and Luis Pedro Zelaya run the farm, building a new era.

The Antigua region, surrounded by the Agua and Fuego volcanoes, has fertile volcanic-ash soil and sits at an altitude of 1,700 meters, giving it a microclimate (the small-scale climatic conditions particular to a place) ideal for growing coffee. It is also blessed with pure water sources, and these natural conditions support the production of high-quality coffee.

Carmona Farm grows mainly heirloom varieties such as Bourbon and Typica. Harvest takes place in mid-January, with only fully ripe red cherries carefully hand-picked. After harvest, the coffee is processed by the fully washed (wet) method. This traditional method, in which the harvested cherries are washed and fermented, draws out a clean, well-balanced flavor. After processing, the beans are sun-dried on the patio (a flat drying area) for about 17 days.

Carmona Farm's coffee is marked by solid flavor and richness, with a sweetness reminiscent of chocolate and brown sugar in harmony with a bright citrus fruitiness, a smooth mouthfeel, and a mellow, lingering finish.
