[A word from the roaster]
At the roastery in Chikura, time spent building up a roast tailored to the individual character of each bean in the blend. As the roaster warms and the green, grassy scent of the raw beans turns sweet through the Maillard reaction, I watch for that exact moment in each bean and apply the finest, most delicate adjustments to the roast. Carefully after-mix-blending these beans, finished in their very subtle gradations, gives rise to a mild sweetness reminiscent of milk chocolate and roasted nuts. Everyday approachability and rich body meet beautifully, with a smooth, rounded texture as its hallmark. As the temperature settles, a caramel-like toastiness deepens and lingers long as a gentle finish. A calm, dependable balance that quietly accompanies any moment of the day.
