[Origin notes] In Costa Rica, cooperatives and large companies long stood at the center of coffee production, but in recent years micro-mills that offer unique, high-quality coffee drawing on local character have been drawing attention. Farm owners share small-scale wet processing and drying facilities, creating new value by consistently producing coffee of a special flavor.
Surrounded by rugged mountains, the Dota-Tarrazú region is known for producing coffee of rich flavor with striking acidity, thanks to its high elevation and cool climate. Among these, beans from Dota-Tarrazú are distinguished by a singular flavor that combines acidity with a deep richness.
Founded in 2018, the Harmony micro-mill was born from the passion of farm owner Guillermo and his family. Guillermo, who until then had been shipping his coffee to a nearby cooperative, was inspired by seeing his brother Juan Fajas deliver high-quality coffee to the world through a micro-mill, and resolved to take on a new challenge of his own. The name of the Harmony micro-mill comes from the "harmony" of a family that loves music and enjoys playing it together.
At the Harmony micro-mill, every step uses only fully ripe cherries, processed with their own honey process. The harvested cherries are placed in tanks made from oil drums for density sorting, and only the fully ripe ones are carefully selected.
In the black honey process, after the fruit of the coffee cherry is removed, the mucilage (the sticky layer) is left almost 100% intact and dried slowly over about a month. Because so much mucilage remains, the beans tend to stick together and the risk of mold is higher, making this a process that demands the utmost care in drying.
Then, dried unhurriedly on African beds, the beans yield up their sweetness and richness. Through this thorough, labor-intensive process, a special coffee bean is completed.
