In southern Ethiopia, the Yirgacheffe region spreads across mountainous terrain rising to some 2,000 meters, an origin so celebrated it is called the sacred ground of specialty coffee. Within it, Gotiti in the Gedeb district lies at the far southeast of the Gedeo Zone. Once a remote place requiring eight hours from the capital Addis Ababa, it became reachable in about three hours after the Ethiopia-Kenya road opened in 2016. This has advanced the steady supply of high-quality beans and the exchange of information, drawing ever greater attention to the appeal of this land.
In Gotiti's especially high-altitude reaches within the Gedeb district (1,900m to 2,100m), smallholder farmers (0.5ha to 10ha) hand-pick fully ripe cherries. In this land, where a quarter of the terrain is given over to coffee cultivation, fertile volcanic soil, abundant rainfall, and the microclimate characteristic of high altitude (the small-scale climate conditions particular to a place: an optimal environment formed by temperature, humidity, sunlight, wind, and more) are the keys to growing complex, aromatic cherries.
This Yirgacheffe G1 Gotiti Natural is a very rare lot, finished as a natural (non-washed process) using the kind of high-quality cherries generally reserved for washed (water process) coffees. The harvested cherries are gathered at the Gotiti washing station and slow-dried with care over 20 days on African beds (raised drying tables). Turning (by hand) and the removal of defective beans are carried out thoroughly by the staff, heightening cleanliness and the consistency of flavor.
Especially noteworthy is the care for the people behind this quality. At the Gotiti washing station, skilled staff are employed at fair wages, with a system that balances stable livelihoods and technical training. Cherry purchase prices paid to farmers are also set above the market rate, so that the commitment to high quality is met with fair compensation.
The staff all wear green uniform vests, a symbol of the Gotiti washing station's pride in quality and its sense of unity as a team. Behind the careful work and consistent quality control lies this shared awareness and cooperation.
