Consistently one of the most popular offerings here, this is Yirgacheffe G1 Natural.
The floral aroma and fruity character that burst open in the mouth with the very first sip leave an impression unlike any other, powerful and vivid. I then roast with the aim of letting sweetness, and the richness within it, rise up afterward.
Asking what a fruity coffee is, this bean feels like one symbolic answer. I think of it as a cup that quietly keeps you company in the quiet of the morning, or when you want to settle your mind at the end of the day.
[Origin Notes]
In southern Ethiopia, the Idido district on the eastern side of the Yirgacheffe region is a cool, mountainous area spreading across high ground above 2,000 meters. This altitude and the wide day-to-night temperature swing are major factors in growing aromatic, well-defined fruit.
Fully ripe red cherries gathered at the Idido washing station are sun-dried slowly on African beds (raised drying tables) as a natural (non-washed process). During drying, hand turning and the removal of defective beans are carried out thoroughly, achieving a clean flavor even as a natural.
The coffee of this area is grown by many smallholder farmers under a traditional cultivation setting that makes use of natural forest as shade trees (trees that soften direct sunlight). The use of chemical fertilizers is kept to a minimum, and farming methods that draw on the land's own vitality remain alive to this day.
Working directly with farmers around the washing station, quality-control staff provide cultivation guidance, and ongoing efforts support the foundations of daily life, from providing seedlings and building schools and supplying teaching materials to clinics and road maintenance. This stance of nurturing the community itself through coffee-making leads to the steady quality of this bean.
[Tasting Notes]
A floral aroma suggesting jasmine, and a bright, fruity character evoking citrus and tropical fruit. The mouthfeel is light, and a translucent sweetness carries on cleanly through to the finish. Its expression changes as it cools, a clean natural to enjoy right to the last.
