Located at a branching point of the Andes in southwestern Colombia, Huila is one of the world's most highly regarded coffee-producing regions. Within it, the San Agustín district spreads across highlands of 1,600 to 1,900m, blessed with rich volcanic soil and moderate rainfall. The coffee produced here is defined by a rich sweetness and bright acidity, with a strikingly smooth mouthfeel.
The San Agustín district is also known for the archaeological site that gave it its name, the San Agustín ruins, remnants of an ancient civilization that flourished around 1,000 years ago. On this land where a civilization once thrived, 97 small-scale producers now work together to grow high-quality coffee. Although each farm averages only about 1.5ha, the growers use shade trees (trees that shield the plants from direct sunlight) to create an environment well suited to coffee.
This region receives rainfall throughout the year, and unlike other Central American countries the harvest comes twice a year (main crop: October to January; fly crop: June to August). Looking more closely, small amounts are harvested year-round, so production never fully stops even outside the main harvest. Traditional processing methods are cherished here: the harvested cherries are fermented in tanks and then carefully sun-dried on parabolic (arched drying structure) beds. This attentive care keeps flavor variation in check and achieves a clean cup.
Colombia is the world's fourth-largest coffee-producing country, but in recent years an outbreak of leaf rust and a decline in the number of farmers caused production to fall for a time. Even so, the producers of Huila have stayed focused on making high-quality coffee, maintaining their competitiveness on the international market. With policy support such as government export subsidies, the value of Colombian coffee is being reappraised.
The producers of the San Agustín association cooperate to raise quality, carrying out rigorous hand-sorting (removing defective beans by hand). The result is a wonderful coffee with a clean flavor, a bright orange-like acidity, and a pleasantly sweet finish that lingers. Roasting to a high roast balances acidity and body for an easy-drinking cup.
